March 16, a meeting of discussion student clubs «Dialogue on Equal Footing» was held at USUE. Its topic was «How to establish a business from scratch and inspire the team.»
The project «Dialogue on Equal Footing» was launched by Rosmolodezh activists. Within the discussion club, well-known people who have made good progress in different areas meet with students of Russian universities.
Roman Krasnov, USUE Vice-Rector for Social Work, presented to the students of the March meeting Oleg Ananyev, a restaurateur, the laureate of the regional award «Person of the Year». One of the most experienced restaurateurs of Yekaterinburg has many establishments in the city: «Truffaldino», «Krasna Khata», «Khash», Ukrainian restaurant «Evenings on the Farm», «Le Bourg 1905», and other projects.
The main advice that the lecturer gave the students was to ask oneself what you feel a calling to. «Usually, we do not work in the specialty we have trained in. So many years will pass while you find your vocation. You just job hop. I understood what my calling was, only after I was 45,» the restaurateur says.
At the meeting, the students asked what the main difficulties existed in the sphere of public catering. According to the speaker, the restaurant business was one of the riskiest: «The difficulty is that you need to find an inexpensive product and make it an expensive dish. In addition, it is necessary to gather specialists who are educated for the trade and to invest a lot of money in the enterprise. In order to just put a bun on the table for a client, a team of 40 people should work.»
In any business, it is necessary to constantly learn and improve. The businessman himself regularly learns cooking in restaurants abroad: To be a full restaurateur, you must be able to cook yourself.
At the end of the meeting, the lecturer wished the students to find their trade in which they would like to develop, not to be afraid of failures, and to be steady in their purpose.
