Sweet business of USUE

Recently, the USUE food production facility gained a confectionery shop with the production of a wide range of confectionery and pastries. Tantalizing desserts and sweets with vanilla eye-popping names not only ruthlessly tempt students and teachers: the "sweet" business brings a considerable income to the University.

The University followed a fundamental approach when launching the "sweet" shop: they allocated additional areas and reconstructed the existing production facilities. The implemented quantitative accounting program helped improve the quality and introduce a clear accounting of applications for the products with a minimum stock level. In the near future, there is the purchase of a steam convection oven, a beating machine, and a cooling table.

The shop has immediately found skillful fingers. A specialist of long standing and with high experience, the senior confectioner Natalia Bukreeva, is the last to leave her job today: for cooking some delicious things tomorrow, it is necessary to make some dough pieces from the evening.

Strudels, cheesecakes, tartelettes, mutaki, echpochmaks, popularly loved eclairs, rolls, and biscuits ... They are not going to stop at this. For working out new names of products, testing of raw materials and mastering the latest technologies, a third-party technologist is invited to the shop.

To understand the secrets of the confectionery skills and to become a skilled hand at "sweet" business, the students of the USUE College - future bakers and cooks- also come to work here.

“Every day the shop bakes 350 roll cakes with various sweet stuff, 120 short pastries.  For the celebration of Tatiana’s Day, it was necessary to bake 500 eclairs. We always use fresh and natural ingredients! We removed from our assortment unsafe energy drinks and cola. They were replaced by fruit-drinks, nectars, and drinks of berries and dried fruits with honey. There is an idea to sell oxygen cocktails. It is also important that own production allowed to significantly reduce the cost price of confectionery products. For example, a third-party eclair cost 42 rubles, and today it can be bought at a price of 12 rubles 82 kopecks. For the student's purse, the benefit is obvious,” Svetlana Kuznetsova, director of the food production plant, says.

In future, the new workshop will provide confectionery and bakery products to buffets in all student dormitories. Moreover, very soon, at the end of February, the University will open a new large buffet on the third floor of the old academic building.
