Oh, these buns!

On November 12-13, the 20th annual festival of flour, bread, bakery, confectionery and cake quality is taking place at USUE. About 15 of the best manufacturers offered over 50 samples of their products for expert assessment. The festival is accompanied by a tasting fair.

 

 

Appetizing buns, bread, cakes, marmalade, pastries and chocolate - their aroma filled the USUE hall this morning.

 

The head of the company producing designer chocolate, Yulia Mokerova, presents her products at the festival for the second time. Yulia’s chocolate is made of specially selected cocoa beans brought from Peru, Venezuela, Guatemala, Mexico, and Madagascar.

“The thing is that the consumer is becoming more and more selective and literate. When we started twelve years ago, the concept of handmade chocolate was unknown to many people, and it was unclear why such a candy was more expensive than at a shop. But now a consumer knows our products very well and expects high quality. The recipe is being improved from year to year, new unusual flavors are appearing, technological processes are being upgraded, and this is great,” Yulia Mokerova noted.

 

 

The experts tasted the bakery products, assessed their taste, the way they look, and crumb structure. The experts paid particular attention to the flour. The jury members tasted it dry, determining the taste, color, and smell.

“The quality of flour today varies. It is mainly produced under GOST, that means the requirements remain unchanged. Today, consumers, including those who adhere to a healthy diet, can choose the flour that suits them better: premium or any other grade. Not that the quality of flour has been deteriorating in recent years, but there has been no improvement in quality either,” says Vera Solovyova, director of the USUE Institute of Management, Entrepreneurship and Engineering and president of the festival jury.

 

 

Representatives of enterprises from the Sverdlovsk region, Moscow, and Rostov-on-Don are taking part in the competition. The winners will be announced tomorrow, November 13.

The festival was organized by USUE, the Quality Assurance Center with the support of the Ministry of Agro-Industrial Complex and Consumer Market of the Sverdlovsk region, the Yekaterinburg Administration, and the Yekaterinburg Municipal Consumer Protection Center.
